  • Chicken Stock – If you have the time, the best way to make your turkey giblet gravy is to make your own stock. You can do so by browning the chopped carcass and neck of your turkey and simmering it with vegetables. But you can also use water or chicken stock that will make a flavorful base for the gravy. So, whatever you choose, you will need five cups of water, chicken stock, or turkey stock.
  • Giblets – To make the giblet soup, you will need one turkey neck, heart, and gizzard of the turkey. While many recipes also use liver, we will not be using it.
  • Onion – To add an umami flavor, we will need ½ medium onion, coarsely chopped.
  • Bay Leaf – To add depth to the gravy, we will need one bay leaf.
  • Reserved Fat or Butter – To make the most of the flavors from the giblets, we will need ¼ cup of reserved fat from the roasting pan. If you don’t want to use this, you can use ¼ cup of melted butter.
  • All-Purpose Flour – To thicken the gravy, we will need ⅓ cup all-purpose flour.
  • Sage – To infuse earthy, minty, and peppery flavors in the turkey giblet gravy, we will need one tablespoon of finely chopped fresh sage. 
  • Salt – No recipe is complete without the use of salt. You can adjust the amount of kosher salt required according to taste.
  • Black Pepper – To add a punch of heat, you can also add freshly ground black pepper to taste.

Steps To Make Turkey Giblet Gravy

1. Prepare The Stock

To make the stock for the gravy, gather all the ingredients. In a large saucepan, add water/Chicken broth/ turkey broth, turkey neck, heart, gizzard, onion, and bay leaf. Bring it to a boil over high heat and reduce the heat to low, cover, and simmer for 2 hours. Strain and reserve the turkey stock. 

2. Make The Gravy

Finely chop the giblets and set them aside. When the turkey is done roasting, remove the fat from the roasting pan. Put the fat or melted butter (if you prefer that over the fat) in a large saucepan over medium-high heat. Add flour and cook, whisking, until golden, about 5 minutes. Add the prepared stock, a cup at a time, while whisking. 

Bring the mixture to a simmer and keep whisking it. At this point, you can scrape any browned bits and juices from the bottom of the roasting pan in which you cooked the turkey and add it to the gravy. Any pieces of onions, celery, etc., in the roasting pan, can also be added for extra flavor. Reduce the heat and simmer the gravy for about 10 to 15 minutes.

Strain the vegetables, if used, and add the reserved giblets and sage. Season the gravy to taste with salt and pepper.

Tips and Variations To Make Turkey Giblet Gravy

  1. If you plan to use store-bought stock, try simmering it down with some roughly chopped onions, carrots, celery, bay leaves, peppercorns, and some fresh herbs, like thyme or parsley stems. This will add depth to your gravy.
  2. To make the turkey giblet gravy more flavorful, you can also add herbs like parsley, thyme, or rosemary during the last 20 minutes while it simmers.
  3. If you find that the gravy isn’t thick enough for you, you can make a slurry using one tablespoon of cornstarch (or flour) and one to two tablespoons of water. Mix it until smooth. Add the slurry mixture to the simmering gravy and continue to cook for 1 to 2 minutes.
  4. You can also omit adding the chopped giblets if you desire. 
  5. To make your gravy more flavorful, you can add all the flavorful liquids that the turkey releases while roasting. Moreover, all the browned bits found in the roasting pan, called the fonds, can also be added to the gravy to enhance flavors.

You can also freeze the turkey giblet gravy by transferring the cooled gravy to freezer bags. You can freeze these bags for up to four months. To consume the gravy, you can defrost it in the refrigerator overnight and reheat it in a saucepan.
