  • 4 Tbsp unsalted melted butter divided
  • 6 Cheddar cheese sliced
  • Meats of choice Bacon, Canadian bacon, or sausage Patties

Instructions

  • In a large bowl add 8 eggs with 1/4 cup of half & half, 1/2 tsp of salt, and 1/8 tsp of black pepper. Whisk to mix well.
  • Butter a 9 x 13“ baking dish with 1 tbsp melted butter using a pastry brush.
  • Preheat oven to 350°F and bake for about 18 minutes until eggs are fully cooked.
  • Use a 3-inch round cookie cutter to cut out the eggs.
  • Slice 6 English muffins in halves and place them on a baking sheet cut side up.
  • Melt 3 Tbsp butter, brush it on top of the muffins and broil for 2-3 minutes until golden. Watch closely to avoid burning.
