Instructions
To prepare the whipped feta dip:
In a food processor, blend feta cheese, Greek yogurt, honey, and lemon juice together.
Set the food processor to high or puree mode to mix the feta until it reaches a smooth consistency.
Utilize a spatula to transfer the dip from the processor to a shallow dish or plate. Smooth the surface, then create ridges with a swirl. Drizzle olive oil and honey into the swirls.
Top with freshly chopped basil, then serve alongside chips.
For the Roasted Tomato Topping (optional)
Preheat the oven to 350˚F.
In a small baking dish, place the tomatoes and garlic. Drizzle with 1 tablespoon of olive oil and stir to ensure even coating.
Roast for 8-12 minutes or until the tomatoes start to burst. Once removed from the oven, use a spoon to position the tomatoes atop the whipped feta dip.
Recipe Notes
Optional tomato topping: This dip tastes great whether or not you include the tomato topping. Without it, the dip is sweeter and creamier, while adding the tomatoes gives a savory touch and more texture. I found it challenging to choose my favorite version; hence, I left this option open depending on what you’re in the mood for!
