Ingredients + Substitutions

Ingredients for recipe in original containers or whole: cilantro, mayo, sour cream, limes, spices, 2 cans of corn, and queso fresco.
  • Corn – I prefer using canned corn, but you can use frozen corn as well. Make sure to drain all the liquid.
  • Mayo + Sour Cream – Mayonnaise and sour cream combine to create a rich and tangy texture, resulting in a smooth and irresistible dip. You can swap the sour cream for plain Greek yogurt, if preferred.
  • Spices – chili powder, garlic powder, cayenne pepper, and salt. The spice blend adds depth and a kick, ensuring each bite is flavorful and well-balanced. If you’re concerned about spiciness, rest assured that the cayenne is only for flavor and can be omitted.
  • Queso fresco –  Crumbling queso fresco into the mix and on top introduces a cheesy element, enhancing the overall richness of the dip.Recipes can be modified by using different kinds of cheese, such as cotija or cheddar, for a different flavor. Other variations include adding jalapeños for a spicy twist, turning the dip into a salad with onions and tomatoes, adding chipotle peppers for a smoky kick, or using charred corn for a deeper flavor. The recipe includes step-by-step instructions, like preparing the corn base, adding mayonnaise and other ingredients, mixing everything together, and topping it with extra cheese and cilantro. Tips for the recipe include using fresh, frozen, or canned corn, experimenting with different cheeses, serving with a variety of vegetables, and adjusting the spice levels to suit personal preference. Shortcuts for making the recipe quicker include using pre-made taco seasoning and making the corn mixture ahead of time and adding the finishing touches later.Mexican street corn dip in a serving bowl garnished with cheese and cilantro.
