What Ingredients Will You Need To Make Gordon Ramsay’s Eggnog?

  • Whole Milk- Milk is the key constituent for the eggnog along with the eggs (of course!).
  • Double Cream- Double creams add texture and a rich taste to the beverage. It also makes the drink thicker.
  • Caster Sugar- The eggnog is a sweet drink and you have to beat the egg whites as well as the egg yolks with sugar.
  • Egg Yolks and Egg Whites- These are the other key ingredients for this recipe. I mean, it wouldn’t be eggnog without eggs.
  • Brandy- This ingredient is actually optional. You can choose to make non-alcoholic eggnog (if you are making it for kids). Even though brandy is the most common choice for eggnog, you can also use rum or cognac. 
  • Vanilla Extract- A lot of people don’t prefer the ‘eggy’ smell in their eggnog, so vanilla extract makes it smell sweeter. 
  • Ground Spices (Ginger, Nutmeg, Cinnamon, Cloves)- Eggnog is a drink for the holidays. So, it has a lot of Christmas spices that help you keep warm and fuzzy. 
  • Whole Nutmeg and Cinnamon Sticks- This is purely for presentation. You know it’s about how it tastes but also about how it looks.

Steps To Make Gordon Ramsay’s Eggnog

1. The Spice Gals

 Take a large saucepan and pour the milk and vanilla extract into it. Then, add the ground nutmeg, cinnamon, ginger, and cloves to it. Stir it and place the saucepan over medium heat. Bring it to just a boil and then remove it from heat. Once it has properly warmed up, set it aside for 10 minutes to let the flavors infuse.

2. Whisk-ey Eggs

Add the egg yolks to a large bowl and add about 200 g of caster sugar to it. Now, whisk them until they are thick and look pale. 

3. Such A Temper

When you have whisked the eggs, it’s time to temper them. Pour a small amount of the milk into the yolk mixture and whisk them until combined. After that, add all of the milk gradually to the yolks while stirring continuously until combined well.

4. Don’t Let The Eggs Curdle

Then, pour this mixture into another saucepan and place it over medium while stirring. Cook it until the mixture becomes thick but make sure to not let it boil. That will make the eggs curdle and we do not want that.

5. Add The Nog To The Egg

Once the mixture has thickened slightly, remove it from heat. Add the brandy to it and stir. Also, stir in the double cream in it. Set the drink aside to chill before you serve it.

6. Before We Go

Before serving the eggnog, add the egg whites to a large bowl and whisk until they have soft peaks. Then, add the remaining sugar to it and whisk it until it has a glossy look. Gently, fold the eggnog into the meringue. Pour this into glasses and serve with whole nutmeg and cinnamon sticks.

  • 350 ml Double Cream
  • 230 g Caster Sugar
  • 5 Egg Yolks
  • 3 Egg Whites
  • 4 tablespoons Brandy
  • 2 teaspoons Vanilla Extract
  • 1 ½ tablespoons Ground Ginger
  • 1 ½ teaspoons Ground Nutmeg
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Cloves
  • Whole Nutmeg and Cinnamon Sticks (for serving)
  • In a large saucepan, pour the whole milk. Also, pour the vanilla extract into it. Then, add the ginger, cinnamon, nutmeg, and cloves to it. Stir it and then place it over medium heat.
  • Bring this mixture just to a boil and then remove the pan from heat. Leave it aside for 10 minutes to let the flavors infuse.
  • Meanwhile, add the egg yolks to a large bowl and also add 200g caster sugar to it. Whisk them until they are combined. They are done when they look pale and thick.
  • Now, you need to temper the eggs. Add a little bit of warm milk to the bowl and keep whisking until combined.
  • Then, gradually add all of the milk while whisking continuously until all of the milk and eggs are combined.
  • Transfer the mixture to another saucepan and place it on medium heat. Keep stirring and cook it until it becomes a little thick. Make sure you don’t let it boil as the eggs will curdle and you won’t get the smooth consistency we’re looking for.
  • When the mixture is just thick, remove the pan from heat and add brandy to it. Also, add the double cream to it and stir. Keep this aside to cool until you have to serve.
  • Now, for serving, take the egg whites in a bowl and whisk them until the egg whites have soft peaks. Then, add the 30 g caster sugar to it and whisk it some more until glossy.
  • With the help of a long spoon, fold the eggnog into this meringue gently until combined.
  • Pour the eggnog into glasses and serve with whole nutmeg and cinnamon sticks.
