- 2 cups Carrots (shredded)
- 4 Large Eggs
- 2 cups All-purpose Flour
- 1 cup Pecan (chopped)
- 1/4 cup Raisins
- 3/4 cups Coconut (shredded)
- 1 cup Canola Oil (optional)
- 2 cups Granulated Sugar
- 2 teaspoon Cinnamon
- 1 teaspoon Baking Powder
For Filling
- 8 oz Cream Cheese (softened)
- 1 Large Egg
- 1/3 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
For Frosting
- 4 oz Cream Cheese (softened)
- 1/4 cup Pecans (chopped)
- 2 cups Sugar (powdered)
- 3 tablespoons Milk
- To a bowl containing all-purpose flour, baking soda, cinnamon powder, and salt, add large eggs, sugar, and vanilla extract. Combine it well, until smooth.
- Now, add grated carrots, coconut, raisins, and pecans to the bowl. Mix them until creamy smooth. For the filling, add the raisins, vanilla extract, sugar, and egg to the bowl with cream cheese in it. Whisk it well to combine.
- Fill the bottom of the sprayed pan with some batter. Now, spread prepared cream cheese filling on the batter. Sprinkle some chopped pecans and raisins.
- Add the remaining batter to the pan and bake it in a preheated (350 F) oven for about 60 to 65 minutes. When it’s done, set the cake aside to cool.
- Beat sugar and cream cheese until creamy smooth. Pipe this frosting carefully onto the cake. Add some chopped pecans and raisins on top.
