Caprese Pasta Salad Recipe
- 2 cups Fusilli Pasta
- ⅓ cup Extra-Virgin Olive Oil
- 2 pints Cherry Tomatoes
- 8 ounces Mozzarella Beads
- 2 tbsp Chopped Basil
- 2 tsp Balsamic Vinegar
Take a big pot of water. Add salt to this and bring to boil. Once the water has come to a boil, add the pasta. Cook it until al dente. Drain the water and set the pasta aside.
In a pan, put olive oil. To this, add the tomatoes and salt. Cover with a lid and cook on medium heat. Stir occasionally.
Cook the tomatoes until their skins have burst. This would take about 6 to 12 minutes.
Remove the pan from heat. Now, add the pasta to this and stir well. Set this mixture aside to cool for a bit.
