Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan.
In a medium mixing bowl, combine flour, xanthan gum, and salt.
With a pastry knife, cut butter into the flour until it resembles small peas.
Add milk and combine.
Using floured hands, knead the dough until it forms a ball.
Separate the dough into 24 equal balls.
With floured fingers, press each ball into a 1 and 1/2-inch circle and place in the bottom of each mini muffin cup.

In a skillet over medium heat, cook bacon until evenly brown.
Drain bacon on paper towels and then move bacon to a cutting board and chop into small pieces.

Bring water in a medium pot to a boil.
Wash and peel the potato and cut into cubes and add them to the boiling water.
Boil until the potatoes are fork-tender, soft is good since you’ll be mashing them.
Remove the potatoes from heat and transfer to a mixing bowl.
Add coconut milk, olive oil, salt, and garlic powder to the potatoes and mix with an electric hand mixer until smooth.

Mexican Vegan Falafel Balls Recipe
First, drain your chickpeas and rinse. Set aside.
Next, grind your broccoli/cauliflower so that it is “riced.” Makes about 1 to 1.5 cups riced after placed in a food processor or blender.
Next, add your chickpeas to the food processor. Pulse together until combined. Do not overmix. You want the batter to be thick and chunky.
Next empty mix into a bowl.
Add the onion jalapeno in the food processor or blender and pulse until combined. Mix with chickpea and broccoli batter bowl.
Mix in your spices, flour, and flaxseed meal.
Roll the batter into balls a little bigger than golf ball size.
Place these falafel balls on a cookie sheet and chill in the fridge for 1 hr or freezer for 10 -15 minutes to set. The longer the better if using the fridge.
Once chilled, remove from fridge.
Heat a large non-stick pan on medium with a few tbsps of oil (2-3 tbsp). Enough to coat the pan so falafel doesn’t stick. See notes for the baking option.
Place half the vegan falafel balls in the pan and fry on medium-high, turning gently, for 4-6 minutes or until golden brown. Use the lid of the pan to cover any oil splash if needed.
Add more oil and repeat for the second batch.
Place all on a paper towel and blot off extra oil if desired.
Season with more salt/pepper if desired. Serve right away or freeze for later.

In the bowl of a stand mixer, gently whisk Warm Milk, Honey & Yeast. Set aside to proof (approx. 5-10 minutes)
While Yeast Mix is Proofing, Whisk together your Dry Ingredients & measure out your Add Last Ingredients.
Line two Cookie Sheets with Parchment or Silpat Mat.
Prepare your Piping/Decorating Bag with your desired tip. I used Tip Size 1A to make Large, Soft Breadsticks & Tip Size 12 for the Small, Crunchy Breadsticks. If you don’t have a piping bag, you can always improvise with the tip of a Ziplock Bag trimmed off.
Add Dry Ingredients to Proofed Yeast. Using the Paddle Attachment, mix on Low speed while adding the Oil & Apple Cider Vinegar. Continue mixing on Medium/High for approx. 2-3 minutes. The mixture will be thick & sticky (nothing like regular dough).
Scoop dough into the Piping Bag & pipe dough onto lined cookies sheets. Be sure to leave 3/4 – 1″ Spacing between Large Breadsticks, and 1/2″ Spacing between Small Breadsticks.
Very gently brush or spray (spraying is easiest) the Olive Oil on the dough & top with any desired toppings.
Set Aside the Breadsticks in a warm spot to proof for approx. 12-18 minutes while the oven is preheating. Don’t overproof these.
Preheat oven to 425° degrees Fahrenheit.
Once Breadsticks are done proofing, place them in the oven on the upper rack. Bake until the Breadsticks are done & lightly browned – approximately 15-25 minutes depending on the size & texture you want. Less time for the small, crunchy ones & a little more time for the large, soft ones. Avoid over-baking.
Remove from oven and place Breadsticks on a cooling rack. Serve warm if desired.

Vegan Sundried Tomato Sweet Potato Bites Recipe
Preheat your oven to 425 F.
Brush the sweet potato rounds with olive oil and season with a pinch each of salt and pepper.
Place onto the baking sheet and roast for 15 minutes until its golden brown. Flip and roast for another 15 minutes until tender and golden on the other side.

Bake your gluten-free baguette.
Keep oven on and increase the temperature to 450F.
Once cooled, slice baguette on a diagonal or in even slices, approximately 1/2 inch thick, making half-inch thick slices — you should have around 20 slices.
Arrange slices on a parchment-lined baking sheet and top each with a slice of mozzarella if you like it melted, or wait to place un-melted cheese on top after toasting if you prefer.

Mini Taco Appetizers Recipe
Preheat the oven to 350 F.
Combine the tomato, onion, jalapeño, garlic, cilantro, and lime juice. Season with salt and pepper and stir.
Use a 3-inch cookie cutter to cut out 4 small taco shells from each tortilla. Save the scraps and toast them for a crispy garnish for salads or soups.
In a microwave, heat the tortillas for 10 to 20 seconds, covered
Using 2 teaspoons of oil, brush both sides of each tiny tortilla and sprinkle with salt.
Press into the openings of a mini muffin tin.
Repeat with 11 more little tortillas, lightly reheating if needed to keep them pliable. Don’t let the tortillas dry out.
Repeat with the second mini muffin tin or repeat after cooking the first batch of mini taco shells for a total of 24.
Bake for 10 to 12 minutes or until lightly browned.
Meanwhile, heat a large skillet over medium heat. Add 1 teaspoon of oil followed by the ground beef. Cook, breaking up into small pieces, until no longer pink. Use a spoon to scoop out any excess oil.
Add the Picante sauce, chili powder, and cumin. Season with salt and pepper and stir.
Simmer for about 5 to 10 minutes, or until the sauce is mixture is no longer watery. Taste for seasoning.
Add a heaping spoonful of the beef mixture to each tortilla shell followed by a dollop of crema, a scoop of homemade pico de gallo, and a sprig of cilantro. Serve and enjoy.

Peel off strips of the skin of the cucumber and Cut the cucumber into slices that are about 5/8 inch thick, discarding the ends.
Use a melon baller to carefully scoop out the center of each cucumber slice to create a small cup.
Put the guacamole into a small Ziploc bag, then carefully snip off the corner of the bag.
Lay cucumber pieces out on a serving dish, with the scooped side up.
Carefully squeeze out enough guacamole to fill the center of each piece of cucumber.
Sprinkle each one with the tiniest pinch of chile powder.
